2010 has seen the launch of an innovative new Fairview Feta cheese. Fairviews Feta is packed flat, using so-called skin packaging that eliminates the need to include brine in the pack.
To quote Fairview’s website: “Brine is the salty solution that old fashioned feta was packed in. In most tub-packed feta this means that along with 200g of cheese you are also taking home around 200ml of useless brine, to take up space in your fridge. Of course producers also need to transport that brine around, and someone needs to pay for the transport you! Incidentally, our product is endorsed by the Anti-Brine Society!
“Fairview Feta has been developed at our Vineyard Cheesery over a period of more than six months. Cheesemaker Louis Lourens and his team have made use of the latest technology, and are confident that the product is world-class offering. We have been using our cheese tasting room to gain feedback and input from guests and cheese fans. Suffice to say, the response has been fantastic. The cheese is made from 100% Jersey cows milk, sourced from a single herd in the Boland and it matches fresh, tangy taste with a firm texture that will not simply fall apart in your salad.
