Royal Wedding cake

So, what food was served at the Royal Wedding?

With the dress revealed and the wedding over, the day of royal festivities continued with a reception fit for – well, a princess. And just as fashionistas wondered what type of gown Catherine Middleton would wear, foodies buzzed about what would be served at the royal reception. Now we know…

Following the 11 am ceremony at Westminster Abbey in London on Friday, the newly named duke and duchess of Cambridge headed to a lunchtime reception at Buckingham Palace, hosted by the prince’s grandmother, Queen Elizabeth II.

While listening to harp music, about 650 guests of the 1 900 invited to the wedding ceremony dined on 10 000 canapés including:

— Cornish crab salad on lemon blini
— Pressed duck terrine with fruit chutney
— Roulade of goat cheese with caramelized walnuts
— Scottish smoked salmon rose on beetroot blini
— Miniature watercress and asparagus tart
— Poached asparagus spears with hollandaise sauce for dipping
— Quail eggs with celery salt
— Scottish langoustines with lemon mayonnaise
— Pressed confit of pork belly with crayfish and crackling
— Wild mushroom and celeriac chausson
— Smoked haddock fishcake with pea guacamole
— Miniature Yorkshire pudding with roast fillet of beef and horseradish mousse

Sweets included:

— Gateau opera
— Blood orange pate de fruit
— Rhubarb crème brulee tartlet
— Passion fruit praline
— White chocolate as well as dark chocolate ganache truffle

All the ingredients for the appetizers were sourced from royal holdings using UK-based ingredients, including Gressingham duck, English goat cheese from Paxton and Whitfield, Welsh organic celery salt, langoustines from the northwest coast of Scotland and Windsor Estate lamb.

The wedding cake and a chocolate biscuit cake (requested by the prince) also were served at the reception. The eight-tier wedding cake (pictured, above) was designed by Fiona Cairns and made from 17 individual fruit cakes, 12 of which formed the base, and decorated with cream and white icing, 900 individually iced flowers and 17 different types of leaves.
