SAAFoST Expert Workshop: Crisis and opportunity with grains

SAAFoST has announced the first in a series of expert workshops – beginning with one on grains, a topic of much debate, interest and concern with the Ukraine war, as well as changing consumer health demands.

The Topic: Wholegrain, multigrain & wheat-free bakery products

Opportunities for locally-available cereals and pulses, and ingredient solution suppliers. The developing crisis in wheat supply has forced the baking industry to look for alternative grains and ingredients for bakery products. This coincides with the global interest in plant proteins.

Why you should attend

A recent system analysis of the bread value chain in sub-Saharan Africa highlighted challenges but also opportunities.

For example, partial replacement of refined, mostly imported, wheat in bread products with ingredients from more climate-resilient crops could have various benefits. These include improving food and nutrition security, sustainability of the food system and opening up equitable economic opportunities.

During the workshop participants:

  • Will obtain insights from experts on ingredients and processes for the development of novel bakery products.
  • Hear about the findings of the international LEAP Agri -funded Nutrifoods project that seeks solutions to increase the use of climate-smart food crops to provide nutritionally-rich baked products that meet consumer needs while favouring local economies.
  • Meet with ingredient and equipment suppliers to discuss product ideas and problem-solving.
  • Ask questions, share experiences and contribute to drafting action plans for future research.
